- 1.5 pounds boneless, skinless chicken (breast or thighs), cut into bite-sized pieces
- ¼ cup olive oil
- 4 cloves fresh garlic, minced
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh herbs (parsley, basil, or dried Italian herbs)
Instructions
- In a bowl, combine olive oil, minced garlic, grated Parmesan cheese, and pinch of salt and pepper. Stir until well mixed.
- Add chicken pieces to marinade, coating evenly. Cover and refrigerate for at least 30 minutes or up to 4 hours.
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Preheat grill to medium heat. Skewer chicken pieces, leaving space between each piece.
- Grill skewers for about 10-12 minutes, turning occasionally, until chicken reaches 165°F.
- Remove from the grill, then sprinkle with extra Parmesan and fresh herbs before serving.
