Ingredients

  • 1.5 pounds boneless, skinless chicken (breast or thighs), cut into bite-sized pieces
  • ¼ cup olive oil
  • 4 cloves fresh garlic, minced
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh herbs (parsley, basil, or dried Italian herbs)

Instructions

  1. In a bowl, combine olive oil, minced garlic, grated Parmesan cheese, and pinch of salt and pepper. Stir until well mixed.
  2. Add chicken pieces to marinade, coating evenly. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  4. Preheat grill to medium heat. Skewer chicken pieces, leaving space between each piece.
  5. Grill skewers for about 10-12 minutes, turning occasionally, until chicken reaches 165°F.
  6. Remove from the grill, then sprinkle with extra Parmesan and fresh herbs before serving.
