Ingredients

- 1 lb skirt steak
- 1/4 cup olive oil
- Juice of 2 lemons
- 3 cloves garlic, minced
- Fresh herbs (parsley, cilantro, or basil), chopped
- 1 cup couscous
- 1 cup water or broth
- Salt and pepper to taste
- Optional: grilled vegetables (bell peppers, zucchini)
Instructions
- In a bowl, combine olive oil, lemon juice, minced garlic, and chopped herbs. Season with salt and pepper.
- Place skirt steak in a dish or zip-top bag, pour marinade over, and let it marinate for at least 30 minutes.
- In a saucepan, bring water or broth to a boil. Stir in couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
- Mix in lemon zest, additional lemon juice, olive oil, and chopped herbs into the couscous. Season with salt and pepper.
- Preheat grill to high heat. Grill skirt steak for 3-4 minutes on each side for medium-rare. Let rest before slicing.
- Serve couscous on a plate topped with sliced steak. Add grilled vegetables if desired.
Notes
For best flavor, allow the skirt steak to marinate longer. Slice against the grain for tenderness.
