Ingredients

  • 4 fresh peaches, diced
  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a jumbo muffin tin or line with paper liners.
  3. In a large bowl, whisk together flour, baking powder, baking soda, and sugar.
  4. In another bowl, beat the softened butter until fluffy; add eggs and mix until combined.
  5. Combine wet and dry ingredients, alternating with milk until just mixed.
  6. Fold in diced peaches gently.
  7. Drizzle half of the caramel sauce into the batter and fold gently.
  8. Spoon batter into muffin tins, filling them three-quarters full.
  9. Top with more caramel sauce.
  10. Bake for 20-25 minutes or until a toothpick comes out clean.
  11. Allow to cool for 10 minutes before transferring to a wire rack.

Notes

For a vegan version, substitute eggs with ground flaxseed mixed with water and use plant-based milk and fats.
