- 4 fresh peaches, diced
- 3 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup milk
- 2 tsp baking powder
- 1 tsp baking soda
- 1 cup caramel sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a jumbo muffin tin or line with paper liners.
- In a large bowl, whisk together flour, baking powder, baking soda, and sugar.
- In another bowl, beat the softened butter until fluffy; add eggs and mix until combined.
- Combine wet and dry ingredients, alternating with milk until just mixed.
- Fold in diced peaches gently.
- Drizzle half of the caramel sauce into the batter and fold gently.
- Spoon batter into muffin tins, filling them three-quarters full.
- Top with more caramel sauce.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool for 10 minutes before transferring to a wire rack.
Notes
For a vegan version, substitute eggs with ground flaxseed mixed with water and use plant-based milk and fats.
