Ingredients

  • 200g udon noodles
  • 2 tablespoons unsalted butter
  • 100g kimchi
  • 2 cloves garlic, finely chopped
  • 1 teaspoon ginger, finely chopped
  • 2 soft-boiled eggs
  • 2 green onions, chopped
  • 1 teaspoon sesame oil

Instructions

  1. Prepare the soft-boiled eggs: Bring a pot of water to a rolling boil. Gently add the eggs and boil for 6-7 minutes. Transfer immediately to an ice bath for easy peeling.
  2. Cook the udon noodles according to package instructions. Once done, drain and set aside.
  3. In a skillet over medium heat, melt the butter. Add the minced garlic and ginger, sautéing until fragrant but not browned—about 1-2 minutes.
  4. Add the kimchi to the skillet and cook until warmed through.
  5. Add the cooked udon noodles to the skillet, tossing gently to coat them in the buttery kimchi mixture.
  6. Serve the udon in bowls, place the soft-boiled egg on top. Sprinkle with chopped green onions and a drizzle of sesame oil.

Notes

For a gluten-friendly option, replace udon noodles with rice noodles. Adding extra vegetables can enhance the dish’s nutrition.
