- 200g udon noodles
- 2 tablespoons unsalted butter
- 100g kimchi
- 2 cloves garlic, finely chopped
- 1 teaspoon ginger, finely chopped
- 2 soft-boiled eggs
- 2 green onions, chopped
- 1 teaspoon sesame oil
Instructions
- Prepare the soft-boiled eggs: Bring a pot of water to a rolling boil. Gently add the eggs and boil for 6-7 minutes. Transfer immediately to an ice bath for easy peeling.
- Cook the udon noodles according to package instructions. Once done, drain and set aside.
- In a skillet over medium heat, melt the butter. Add the minced garlic and ginger, sautéing until fragrant but not browned—about 1-2 minutes.
- Add the kimchi to the skillet and cook until warmed through.
- Add the cooked udon noodles to the skillet, tossing gently to coat them in the buttery kimchi mixture.
- Serve the udon in bowls, place the soft-boiled egg on top. Sprinkle with chopped green onions and a drizzle of sesame oil.

For a gluten-friendly option, replace udon noodles with rice noodles. Adding extra vegetables can enhance the dish’s nutrition.
