- 4 bone-in lamb chops
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh thyme, chopped
- 3 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1/2 cup chicken or vegetable broth
- Salt and freshly ground black pepper
Instructions
- Season the lamb chops with salt and pepper and let them sit at room temperature for 30 minutes.
- Heat olive oil in a skillet over medium-high heat. Sear the lamb chops for 3-4 minutes on each side until golden brown.
- Remove the lamb from the skillet and keep warm. Add more oil if needed, and sauté minced garlic for 30 seconds.
- Stir in mustard and thyme, cooking until fragrant, then pour in the broth and scrape the bottom of the pan.
- Simmer the sauce for a few minutes until thickened, then pour over the lamb chops before serving.
- Let lamb chops rest for 5 minutes before serving for the juiciest meat.
