Ingredients

  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh thyme, chopped
  • 3 cloves garlic, minced

  • 1/2 cup chicken or vegetable broth
  • Salt and freshly ground black pepper

Instructions

  1. Season the lamb chops with salt and pepper and let them sit at room temperature for 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Sear the lamb chops for 3-4 minutes on each side until golden brown.
  3. Remove the lamb from the skillet and keep warm. Add more oil if needed, and sauté minced garlic for 30 seconds.
  4. Stir in mustard and thyme, cooking until fragrant, then pour in the broth and scrape the bottom of the pan.
  5. Simmer the sauce for a few minutes until thickened, then pour over the lamb chops before serving.
  6. Let lamb chops rest for 5 minutes before serving for the juiciest meat.
