- 1 tsp lye water
- 50g unsalted butter, softened
- 2 salted egg yolks
- 50g granulated sugar (or coconut sugar)
- 1 tsp vanilla extract (or almond extract)
Instructions
- Prepare the Filling: In a bowl, mix softened butter, sugar, and salted egg yolks until creamy. Add vanilla and lye water until smooth.
- Make the Mooncake Dough: Combine flour, golden syrup, and lye water in a bowl. Knead to form a smooth, pliable dough.
- Portioning the Dough: Divide dough into equal portions (about 30g each). Shape filling into similar-sized balls.
- Assemble the Mooncakes: Flatten dough, wrap it around the filling, and seal the seams. Shape as desired.
- Baking: Preheat oven to 350°F (180°C) and bake for 10-12 minutes until set. Let cool.
- Allow to Rest: Let mooncakes rest for several hours or overnight for flavor melding.
- Serving: Slice open to reveal custard filling and serve with tea.
