Instructions
- Sprinkle the gelatin over cold water in a small bowl and let it soften.
- In a saucepan, whisk together lemon juice, zest, and sugar. Heat gently until sugar dissolves, then add gelatin, stirring until incorporated.
- Beat egg yolks in a separate bowl, temper with a bit of warm lemon mixture, then stir back into the saucepan. Cook over low heat, stirring constantly until thickened—do not boil.
- Remove from heat and allow to cool completely before folding in whipped cream.
- Whip heavy cream until soft peaks form, then gently fold into the cooled lemon mixture.
- Pour into serving bowls or glasses and refrigerate for at least four hours until set.
