  • 1/4 cup cold water
  • 1 teaspoon vanilla extract

Instructions

  1. Sprinkle the gelatin over cold water in a small bowl and let it soften.
  2. In a saucepan, whisk together lemon juice, zest, and sugar. Heat gently until sugar dissolves, then add gelatin, stirring until incorporated.
  3. Beat egg yolks in a separate bowl, temper with a bit of warm lemon mixture, then stir back into the saucepan. Cook over low heat, stirring constantly until thickened—do not boil.
  4. Remove from heat and allow to cool completely before folding in whipped cream.
  5. Whip heavy cream until soft peaks form, then gently fold into the cooled lemon mixture.
  6. Pour into serving bowls or glasses and refrigerate for at least four hours until set.
