Instructions

  1. Slice the cabbage into wedges, keeping the core intact.
  2. Heat olive oil in a skillet over medium-high heat until shimmering.
  3. Place cabbage in the skillet cut side down and cook for 4-5 minutes until charred.
  4. Flip the cabbage, add garlic, salt, and pepper, and cook for another 4-5 minutes until tender.
  5. In a blender, combine drained white beans, lemon juice, a pinch of salt, and a splash of olive oil. Blend until smooth, adding water as needed.
  6. On a plate, layer the white bean purée, top with charred cabbage, and drizzle with lemon juice and zest.

Notes

For best results, avoid overcrowding the pan to maintain good char. Common mistakes include not allowing enough time for the cabbage to char and cooking the garlic too early.
