Ingredients

- 4 boneless chicken breasts or thighs
- 2 fresh lemons (zested and juiced)
- 4 cloves garlic (minced)
- 2 tablespoons fresh thyme (chopped)
- 2 tablespoons fresh rosemary (chopped)
- 2 tablespoons olive oil
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Prep the ingredients by mincing garlic and chopping herbs, and setting aside lemon zest and juice.
- In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper, sear for 5-6 minutes per side until golden brown, then set aside.
- In the same skillet, add more olive oil if needed, and sauté minced garlic until fragrant.
- Pour in chicken broth, then add in lemon zest and juice; stir and scrape bits from the skillet.
- Return chicken to skillet, spoon some sauce over it, and let it soak in for 2-3 minutes.
- Sprinkle fresh herbs just before serving and stir to combine.
Notes
Let the chicken rest after cooking for juicier meat. Use fresh herbs for best flavor.
