Ingredients
- Boneless chicken (breast or thighs)
- Fresh lemons (juice and zest)
- Romano cheese (finely grated)
- Fresh garlic (minced)
- Butter
- Olive oil
- Fresh herbs (parsley or thyme)
- Salt
- Pepper
Instructions
- Season the chicken with salt and pepper. Optionally, flatten breasts for even cooking.
- In a large skillet, heat olive oil and melt butter over medium-high heat. Sear chicken for 6-7 minutes on one side, then flip and cook for another 5-6 minutes until cooked through. Remove and set aside.
- In the same skillet, sauté minced garlic for about a minute. Squeeze in fresh lemon juice and zest, scraping any browned bits from the pan.
- Add more butter and fresh herbs, stirring to combine.
- Nestle the chicken back in the skillet, allowing it to soak in the sauce for a couple of minutes.
- Plate the chicken and sprinkle with Romano cheese, letting it melt over the hot chicken. Garnish with extra lemon zest and herbs.
Notes
For a spicier touch, add crushed red pepper flakes. Can substitute Parmesan for Romano if needed.
