Ingredients
- Croissant Dough (store-bought or homemade)
- Unsalted Butter (cold)
- Granulated Sugar
- Fresh Lemons (juice and zest)
- Eggs
- All-purpose Flour
- Powdered Sugar
Instructions
- Prepare the Dough: Combine flour, sugar, salt, and yeast in a bowl, then fold in cold butter. Add cold water to form a soft dough, and refrigerate for at least an hour.
- Make the Lemon Filling: In a saucepan, combine lemon juice, zest, sugar, and eggs. Cook over low heat until thickened, then cool completely.
- Shaping the Croissants: Roll out dough into a rectangle, cut into triangles, and place a spoonful of lemon filling at the base of each triangle. Roll up tightly from base to tip.
- Second Rise: Place croissants on baking sheets, cover with a towel, and let them rise for an hour until doubled.
- Baking: Preheat oven to 375°F (190°C). Brush croissants with egg wash and bake for 20-25 minutes until golden brown.
- Glazing: Optionally glaze with powdered sugar mixed with lemon juice after cooling.
