Description

Delicious and vibrant Lemongrass Beef Spring Rolls filled with marinated beef, fresh vegetables, and herbs, wrapped in delicate rice paper.


Ingredients

  • 1 lb flank steak or sirloin, thinly sliced
  • 2 stalks fresh lemongrass, minced
  • 2 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tsp sugar
  • Rice paper wrappers
  • 1 cup carrots, julienned
  • 1 cup cucumbers, julienned
  • 1 cup bell peppers, julienned
  • 1/2 cup fresh cilantro
  • 1/2 cup fresh mint
  • For dipping sauce: 3 tbsp hoisin sauce, juice of 1 lime, and chili sauce to taste

Instructions

  1. In a mixing bowl, combine thinly sliced beef with minced garlic, minced lemongrass, soy sauce, and sugar. Let it marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat and add oil. Sauté the marinated beef until cooked through, about 3-5 minutes. Remove from heat and let cool.
  3. While beef cools, julienne vegetables.
  4. Fill a shallow dish with warm water and dip rice paper wrappers for about 10 seconds until pliable.
  5. Lay the softened wrapper on a surface, add beef, herbs, and veggies, and roll tightly, tucking in the sides.
  6. Serve with prepared dipping sauce.
