- 1 lb boneless chicken (breast or thighs)
- 2 stalks fresh lemongrass (or lemongrass paste)
- 4 cloves fresh garlic, minced
- 2 tbsp soy sauce
- 1 inch fresh ginger, grated
- 2 tbsp vegetable oil
- Fresh herbs (cilantro or green onions)
- 1 lime, for squeezing
Instructions
- Cut chicken into bite-sized pieces and marinate with soy sauce, minced garlic, and grated ginger for at least 30 minutes.
- Trim the woody ends off the lemongrass and smash gently to release oils.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add marinated chicken to the skillet and sauté until golden, about 5-7 minutes.
- Toss in smashed lemongrass, stir-frying for another 2-3 minutes until fragrant.
- Add fresh herbs and a squeeze of lime before serving.
- Serve over jasmine rice or with sautéed vegetables.
Notes
For a vegetarian version, substitute chicken with tofu. Pair with a cucumber salad for balance.
