Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 2 stalks fresh lemongrass (or lemongrass paste)
  • 4 cloves fresh garlic, minced
  • 2 tbsp soy sauce
  • 1 inch fresh ginger, grated
  • 2 tbsp vegetable oil
  • Fresh herbs (cilantro or green onions)
  • 1 lime, for squeezing

Instructions

  1. Cut chicken into bite-sized pieces and marinate with soy sauce, minced garlic, and grated ginger for at least 30 minutes.
  2. Trim the woody ends off the lemongrass and smash gently to release oils.
  3. Heat vegetable oil in a large skillet over medium-high heat.
  4. Add marinated chicken to the skillet and sauté until golden, about 5-7 minutes.
  5. Toss in smashed lemongrass, stir-frying for another 2-3 minutes until fragrant.
  6. Add fresh herbs and a squeeze of lime before serving.
  7. Serve over jasmine rice or with sautéed vegetables.

Notes

For a vegetarian version, substitute chicken with tofu. Pair with a cucumber salad for balance.
