A refreshing and vibrant salad featuring quinoa, cucumber, feta cheese, and a zesty lemon dressing.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 large cucumber, diced
- 1 cup crumbled feta cheese
- Juice of 1 lemon
- 3 tablespoons extra-virgin olive oil
- Salt, to taste
- Freshly cracked pepper, to taste
- Fresh herbs (such as parsley and mint), chopped
Instructions
- Rinse quinoa under cold water to remove bitterness. Combine it with water in a pot, bring to a boil, then cover and reduce to low heat for 15 minutes.
- Dice the cucumber and crumble the feta cheese while the quinoa cools.
- In a bowl, whisk together lemon juice and olive oil, seasoning with salt and pepper.
- Once quinoa is cool, fold it into the dressing, then toss in cucumber, feta, and fresh herbs.
- Taste and adjust seasoning as needed.
- Chill salad in the fridge for at least 30 minutes before serving.
Notes
For variations, try using bulgur or farro instead of quinoa. Fresh herbs can be substituted with dried herbs, but use less as dried herbs are more concentrated.
