- 1 cup Greek yogurt
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp pure vanilla extract
- 1 1/2 cups graham crackers, crushed
- 1/4 cup melted butter
- 1/4 cup sugar (for crust)
Instructions
- Prepare the Crust: In a mixing bowl, combine crushed graham crackers with melted butter and a touch of sugar. Press the mixture evenly into the bottom of a springform pan. Bake at 350°F (175°C) for 10 minutes and cool.
- Make the Filling: Beat cream cheese until smooth, then gradually add sugar. Mix in Greek yogurt, vanilla extract, and eggs one at a time.
- Bake the Cheesecake: Pour filling over the cooled crust and bake in a water bath at 325°F (160°C) for 45-50 minutes.
- Cool and Chill: Turn off the oven, leave the cheesecake inside with the door ajar for an hour, then refrigerate for at least four hours or overnight.
- Serve and Enjoy: Remove from the springform pan, slice, and optionally top with fruits or sauces.
Notes
For a gluten-free option, use ground almonds or oatmeal cookies for the crust.
