Instructions

  1. Prepare the Crust: In a mixing bowl, combine crushed graham crackers with melted butter and a touch of sugar. Press the mixture evenly into the bottom of a springform pan. Bake at 350°F (175°C) for 10 minutes and cool.
  2. Make the Filling: Beat cream cheese until smooth, then gradually add sugar. Mix in Greek yogurt, vanilla extract, and eggs one at a time.
  3. Bake the Cheesecake: Pour filling over the cooled crust and bake in a water bath at 325°F (160°C) for 45-50 minutes.
  4. Cool and Chill: Turn off the oven, leave the cheesecake inside with the door ajar for an hour, then refrigerate for at least four hours or overnight.
