A quick and easy pasta dish featuring sautéed broccoli and garlic, perfect for a family meal.
Ingredients
- Whole wheat or gluten-free pasta (spaghetti or penne)
- Fresh broccoli florets
- Olive oil
- Fresh minced garlic
- Red pepper flakes
- Fresh basil or parsley
- Lemon juice
- Optional: Parmesan cheese or nutritional yeast
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Save about a cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about one minute until fragrant.
- Add broccoli florets and a pinch of salt, and cook for about 5-7 minutes. Add a splash of pasta water if needed to help steam the broccoli.
- Once broccoli is tender, add the cooked pasta, drizzle with lemon juice, sprinkle with red pepper flakes, and mix in fresh herbs.
- Serve warm, adding parmesan cheese if desired and garnishing with a lemon wedge.
Notes
For substitutions, any pasta shape may be used, and zucchini or spinach can replace broccoli.
