Ingredients

  • Whole wheat or gluten-free pasta (spaghetti or penne)
  • Fresh broccoli florets
  • Olive oil
  • Fresh minced garlic
  • Red pepper flakes
  • Fresh basil or parsley
  • Lemon juice
  • Optional: Parmesan cheese or nutritional yeast

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Save about a cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about one minute until fragrant.
  3. Add broccoli florets and a pinch of salt, and cook for about 5-7 minutes. Add a splash of pasta water if needed to help steam the broccoli.
  4. Once broccoli is tender, add the cooked pasta, drizzle with lemon juice, sprinkle with red pepper flakes, and mix in fresh herbs.
  5. Serve warm, adding parmesan cheese if desired and garnishing with a lemon wedge.

Notes

For substitutions, any pasta shape may be used, and zucchini or spinach can replace broccoli.
