Ingredients
- Your favorite pasta (spaghetti, penne, or whole wheat)
- Fresh broccoli, cut into florets
- A few cloves of garlic, minced
- Extra virgin olive oil
- Grated parmesan cheese or nutritional yeast
- Fresh lemon juice
- Pine nuts or walnuts (optional, toasted)
Instructions
- Prepare by bringing a large pot of salted water to a boil and chop broccoli into bite-sized florets.
- Add pasta to boiling water and cook according to package instructions until al dente. Save about a cup of the starchy cooking water before draining.
- In a large skillet, heat a splash of olive oil over medium heat, add minced garlic and sauté until fragrant, about a minute.
- Add broccoli to the skillet and cook for 3-4 minutes, stirring frequently.
- Combine the drained pasta with broccoli in the skillet, adding reserved pasta water to create a sauce and toss well.
- Finish with fresh lemon juice, sprinkle with cheese, and toss again. Heat through for another minute.
- Plate the pasta hot, garnished with nuts and extra cheese if desired, and enjoy!
Notes
Feel free to swap the pasta for zucchini noodles or cauliflower rice for a lighter option. Adjust seasonings to taste.
