Description

A comforting yet healthy pasta dish featuring sautéed broccoli, garlic, and a splash of lemon.


Ingredients

  • Whole grain or gluten-free pasta
  • Fresh broccoli florets
  • Fresh garlic cloves
  • Extra virgin olive oil
  • Fresh lemon juice
  • Fresh basil or parsley

Instructions

  1. Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about half a cup of pasta water before draining.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Sauté minced garlic for 30 seconds until fragrant.
  3. Add broccoli florets to the skillet and sauté until bright green and tender-crisp, about 4-5 minutes.
  4. Drain the pasta and add it directly to the skillet with the broccoli. Toss gently to combine.
  5. Pour in the reserved pasta water gradually until the mixture reaches desired consistency.
  6. Squeeze fresh lemon juice over the top, add fresh herbs, and season with salt and pepper to taste.
  7. Serve immediately, garnished with more herbs or a sprinkle of Parmesan if desired.

Notes

Experiment with different vegetables or add roasted cherry tomatoes for added flavor.
