Description

Delightful buttery cookies with a sweet fruit jam filling, perfect for holiday celebrations and family gatherings.


Ingredients

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup ground almonds
  • A pinch of salt
  • Fruit jam (raspberry, apricot, or strawberry)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F and prepare your baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy (about 3-4 minutes).
  3. Mix in the egg yolk and vanilla extract until combined.
  4. Gradually add in the flour, ground almonds, and salt, mixing until the dough just comes together.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. On a lightly floured surface, roll out the dough to about ¼ inch thick and cut shapes with a cookie cutter, making cut-outs in half of the cookies.
  7. Place cookies on prepared baking sheets and bake for 10-12 minutes, until just lightly golden.
  8. After cooling, dust cut-out cookies with powdered sugar, then spread jam on solid cookies and top them with the cut-out cookies.
  9. If desired, dust again with powdered sugar for a festive finish.

Notes

For a citrusy twist, you can add orange zest to the dough or use lemon curd instead of jam.
