- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 egg yolk
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup ground almonds
- A pinch of salt
- Fruit jam (raspberry, apricot, or strawberry)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F and prepare your baking sheets with parchment paper.
- Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy (about 3-4 minutes).
- Mix in the egg yolk and vanilla extract until combined.
- Gradually add in the flour, ground almonds, and salt, mixing until the dough just comes together.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- On a lightly floured surface, roll out the dough to about ¼ inch thick and cut shapes with a cookie cutter, making cut-outs in half of the cookies.
- Place cookies on prepared baking sheets and bake for 10-12 minutes, until just lightly golden.
- After cooling, dust cut-out cookies with powdered sugar, then spread jam on solid cookies and top them with the cut-out cookies.
- If desired, dust again with powdered sugar for a festive finish.
Notes
For a citrusy twist, you can add orange zest to the dough or use lemon curd instead of jam.
