- 4 large Russet potatoes
- 1 cup sour cream
- 8 oz cream cheese
- 1 cup sharp cheddar cheese, shredded
- 6 slices bacon, cooked and crumbled
- 2 green onions, sliced
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash and pierce the potatoes, then bake for 45-60 minutes until tender.
- Once cool, scoop the flesh into a mixing bowl. Add sour cream, cream cheese, garlic powder, onion powder, salt, and pepper, mixing until smooth.
- Fold in the shredded cheddar cheese and crumbled bacon.
- Transfer to a greased baking dish, top with more cheddar cheese and bacon if desired.
- Bake at 350°F (175°C) for 25-30 minutes, until bubbly and golden brown.
- Garnish with green onions or herbs and serve warm with tortilla chips or veggies.
Notes
For a twist, experiment with different herbs or add jalapeños for spice. Ensure potatoes are fluffy and well-mixed for best results.
