- 1 lb ground beef (or turkey)
- 2 cups mashed potatoes (Yukon Gold recommended)
- 1/2 cup sour cream (or Greek yogurt)
- 1 cup shredded cheddar cheese (or a blend of mozzarella and provolone)
- 1 egg
- 1 cup bread crumbs (panko preferred)
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (thyme or rosemary, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your mashed potatoes, boiling peeled potatoes until tender, then mashing with butter, sour cream, garlic, salt, and pepper until creamy. Set aside.
- In a large bowl, combine ground beef, breadcrumbs, chopped onions, minced garlic, egg, and seasonings. Mix gently to combine.
- Shape the meat mixture into a loaf in a baking dish or on a lined baking sheet.
- Smooth the prepared mashed potatoes over the top of the meatloaf.
- Sprinkle shredded cheese over the mashed potato layer.
- Bake for about 45 minutes, or until the meatloaf is cooked through and the cheese is bubbling and golden.
- Let it rest for about 10 minutes before slicing to help the flavors meld.
