  • 2 cups mashed potatoes (Yukon Gold recommended)
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 cup shredded cheddar cheese (or a blend of mozzarella and provolone)
  • 1 egg
  • 1 cup bread crumbs (panko preferred)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (thyme or rosemary, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your mashed potatoes, boiling peeled potatoes until tender, then mashing with butter, sour cream, garlic, salt, and pepper until creamy. Set aside.
  3. In a large bowl, combine ground beef, breadcrumbs, chopped onions, minced garlic, egg, and seasonings. Mix gently to combine.
  4. Shape the meat mixture into a loaf in a baking dish or on a lined baking sheet.
  5. Smooth the prepared mashed potatoes over the top of the meatloaf.
  6. Sprinkle shredded cheese over the mashed potato layer.
  7. Bake for about 45 minutes, or until the meatloaf is cooked through and the cheese is bubbling and golden.
  8. Let it rest for about 10 minutes before slicing to help the flavors meld.
