A comforting casserole featuring a blend of hearty meatloaf and creamy mashed potatoes, topped with cheese and crispy bacon.

- 1 lb ground meat (beef, turkey, or chicken)
- 2 cups mashed potatoes (fresh or instant)
- 1 cup sharp cheddar cheese, shredded
- 1 cup bacon, cooked and crumbled
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 egg
- 1 cup bread crumbs
- ½ cup milk
- ¼ cup butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine ground meat, chopped onions, minced garlic, bread crumbs, one egg, salt, and pepper and mix until just combined.
- Sauté mushrooms in a skillet with butter until softened, then stir into the meatloaf mixture.
- Prepare mashed potatoes by boiling fresh potatoes until tender, mashing with milk, butter, salt, and pepper.
- Spread half of mashed potatoes in a greased casserole dish.
- Pack the meatloaf mixture evenly over the mashed potatoes.
- Spread the remaining mashed potatoes over the meatloaf.
- Sprinkle cheese and bacon on top.
- Bake for 45-55 minutes until the meat is cooked through and the top is golden.
- Allow to rest for 10 minutes before slicing.
