Ingredients

  • 4 large sweet potatoes
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup milk or cream
  • 2 eggs
  • 1 cup pecans, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, diced
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the whole sweet potatoes until tender. Peel and mash them in a bowl until creamy.
  3. In a skillet, melt the butter and sauté minced garlic and diced mushrooms until fragrant and golden, about 5 minutes.
  4. In a large bowl, mix the mashed sweet potatoes with brown sugar, milk, beaten eggs, sautéed garlic, and mushrooms. Stir until well combined.
  5. Pour the mixture into a greased baking dish, smoothing the top.
  6. Mix chopped pecans, a pinch of cinnamon, and a tablespoon of brown sugar for the topping. Sprinkle this evenly over the sweet potato mixture.
  7. Bake for 30-35 minutes or until the top is golden and crispy.
  8. Allow to cool slightly before serving.

Notes

This casserole can be made ahead and frozen before baking. Thaw overnight in the fridge before baking.
