- 4 large sweet potatoes
- 1/4 cup butter
- 1/2 cup brown sugar
- 1/2 cup milk or cream
- 2 eggs
- 1 cup pecans, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, diced
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- Salt to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Boil the whole sweet potatoes until tender. Peel and mash them in a bowl until creamy.
- In a skillet, melt the butter and sauté minced garlic and diced mushrooms until fragrant and golden, about 5 minutes.
- In a large bowl, mix the mashed sweet potatoes with brown sugar, milk, beaten eggs, sautéed garlic, and mushrooms. Stir until well combined.
- Pour the mixture into a greased baking dish, smoothing the top.
- Mix chopped pecans, a pinch of cinnamon, and a tablespoon of brown sugar for the topping. Sprinkle this evenly over the sweet potato mixture.
- Bake for 30-35 minutes or until the top is golden and crispy.
- Allow to cool slightly before serving.
Notes
This casserole can be made ahead and frozen before baking. Thaw overnight in the fridge before baking.
