- 1 cup lobster meat, chopped
- 4 slices sourdough or brioche bread
- 1/2 cup aged cheddar cheese, shredded
- 1/2 cup brie cheese, sliced
- 2 tablespoons unsalted butter, softened
- 1 clove garlic, minced
- 1 tablespoon fresh parsley or chives, chopped
- Pinch of salt
- Optional: Old Bay seasoning, lemon juice
Instructions
- Prep the lobster by steaming or boiling until fully cooked. Let cool, then chop into bite-sized pieces.
- In a small bowl, mix the softened butter with minced garlic, herbs, and a pinch of salt to make herb butter.
- Spread the herb butter on one side of each slice of bread. On the unbuttered side, layer with both types of cheese and lobster pieces. Top with another slice of bread, buttered side facing out.
- Preheat a skillet over medium heat and add the sandwich. Cook until golden, about 3-4 minutes, then flip and repeat on the other side.
- Check if the cheese has melted after about 8 minutes; lower heat and cover if necessary.
- Once ready, remove and let cool slightly before slicing. Serve with fresh herbs and your favorite dipping sauce.
Notes
For a unique twist, substitute lobster with shrimp or crab, and use different cheese types like cream cheese or Gruyère.
