Instructions

- Add cabbage and let cook down for about 5-7 minutes until it begins to soften.
- Incorporate diced carrots and canned tomatoes, stirring to combine.
- Pour in the broth, add herbs and spices, and stir well.
- Bring to a gentle simmer, cover the pot, and let cook for 20-30 minutes until the vegetables are tender.
- Taste and adjust seasoning as needed.
- Serve warm, garnished with parsley or a squeeze of lemon juice if desired.
