Description

A nostalgic sandwich combining crispy luncheon meat and fluffy eggs, perfect for breakfast or brunch.


Ingredients

  • 2 slices of luncheon meat (Spam, turkey, or vegetarian)
  • 2 large eggs
  • 2 slices of bread (white, whole wheat, or sourdough)
  • 1 tablespoon of unsalted butter
  • Salt and pepper to taste
  • Optional: mayonnaise or mustard for spreading

Instructions

  1. Slice the luncheon meat into preferred thickness.
  2. Heat a non-stick skillet over medium heat and add butter, swirling to coat.
  3. Fry the luncheon meat for 2-3 minutes on each side until golden and crispy.
  4. Whisk the eggs in a bowl until fluffy; add milk or cream if desired.
  5. Push the cooked meat to one side and pour the eggs into the other side of the pan, cooking undisturbed for a minute before stirring to fold until just set.
  6. Assemble the sandwich with cooked meat and eggs between slices of bread, adding a spread if desired.
  7. Return the sandwich to the skillet, adding more butter, and toast until golden brown on both sides, about 2 minutes each.
