- 2 cups Brussels sprouts, trimmed and halved

Instructions
- Preheat the oven to 425°F (220°C).
- Trim and halve the Brussels sprouts and peel and slice the carrots into even pieces.
- In a bowl, toss the Brussels sprouts and carrots with olive oil, minced garlic, maple syrup, sea salt, and pepper.
- Spread the veggies in a single layer on a baking sheet, ensuring space between them for roasting.
- Roast in the preheated oven for 25–30 minutes, turning halfway through until golden and crispy on edges. Optionally broil for the last minute for extra crispiness.
- Serve warm, drizzled with additional maple syrup and garnished with fresh herbs if desired.

For added flavor, consider tossing in chopped walnuts or pecans before roasting. Ensure vegetables are cut uniformly for even cooking.
