- 2 lbs Sweet Potatoes, peeled and cubed
- 6 slices Thick-Cut Bacon
- 1/4 cup Pure Maple Syrup
- 2 tablespoons Unsalted Butter
- Salt, to taste

- Optional: Fresh herbs (rosemary or thyme), cinnamon, nutmeg, apple cider vinegar
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and chop the sweet potatoes into uniform cubes (about 1-inch).
- In a skillet over medium heat, cook the bacon until crispy. Transfer onto a paper towel-lined plate.
- In the skillet with the bacon drippings, toss sweet potatoes with melted butter and maple syrup until well-coated. Season with salt and pepper.
- Spread the sweet potatoes on a baking sheet and sprinkle with crispy bacon bits.
- Roast for 25 to 30 minutes, stirring halfway through, until tender and caramelized.
- Serve warm, optionally garnished with fresh herbs.
Notes
Ensure sweet potatoes are cut uniformly for even cooking. Don’t use imitation maple syrup for the best flavor.
