Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes into uniform cubes (about 1-inch).
  3. In a skillet over medium heat, cook the bacon until crispy. Transfer onto a paper towel-lined plate.
  4. In the skillet with the bacon drippings, toss sweet potatoes with melted butter and maple syrup until well-coated. Season with salt and pepper.
  5. Spread the sweet potatoes on a baking sheet and sprinkle with crispy bacon bits.
  6. Roast for 25 to 30 minutes, stirring halfway through, until tender and caramelized.
