Instructions
- Prep the ingredients: Slice the chicken, mince garlic and ginger, and chop mushrooms and vegetables.
- Cook the chicken: In a skillet, heat oil over medium heat. Add chicken pieces, searing for 5-7 minutes until cooked through. Season with salt and pepper.
- Sauté garlic and ginger: Add minced garlic and ginger to the pan and cook for 1-2 minutes until fragrant.
- Combine broth and noodles: Pour in the broth, bring to a simmer, and add ramen noodles. Cook according to package instructions (4-5 minutes for dried noodles).
- Add extras: Stir in mushrooms and mixed vegetables, cooking until just tender. Add soy sauce and adjust seasoning.
- Finish with herbs and lime: Stir fresh herbs and lime juice into the pot before serving.
