- 2 pounds Russet potatoes, peeled and chopped
- 4 tablespoons butter
- 1/2 cup cream or milk
- 2 cloves garlic, minced
- 1 cup sharp cheddar cheese, shredded
- 1/4 cup fresh herbs (chives, parsley, or thyme), chopped
- Salt and pepper, to taste
Instructions
- Peel and chop the potatoes into even-sized pieces and place them in a large pot. Cover with cold water and bring to a boil. Add salt and cook until fork-tender, about 15 minutes.
- Drain the potatoes and return them to the pot. Incorporate the butter and cream while mashing until smooth and fluffy. Season with salt, pepper, and garlic.
- Fold in the cheese and herbs gently until evenly distributed, then add any additional ingredients like bacon or mushrooms.
- Preheat your oven to 375°F (190°C) and grease muffin tins or ceramic cups. Scoop the mashed potato mixture into each cup, pressing down lightly.
- Bake for 20-25 minutes until golden on top. Optionally, switch to broil for the last minute for a crispy finish.
- Let them cool slightly before serving. Garnish with a pat of butter, extra herbs, or cheese.
Notes
For a dairy-free version, substitute plant-based butter and almond milk. Experiment with different cheeses or add sautéed vegetables for variety.
