Ingredients

- 2 cups all-purpose flour
- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup white chocolate chips
- 2 tablespoons matcha powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup milk
- 1/2 cup vegetable oil or melted butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and matcha powder.
- In another bowl, mix together the pumpkin puree, sugar, eggs, and vegetable oil until smooth. Gradually stir in the milk.
- Pour the wet mixture into the dry ingredients, folding until just combined.
- Fold in the white chocolate chips.
- Line a muffin tin with paper liners and fill each cavity about two-thirds full with the batter.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the tin for 5 minutes before transferring to a wire rack.
Notes
For a lighter treat, replace half of the sugar with applesauce. Experiment with nuts for added crunch.
