Delicious muffins blending matcha, white chocolate, and pumpkin for a unique fall treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup white chocolate chips
  • 2 tablespoons matcha powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup vegetable oil or melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and matcha powder.
  3. In another bowl, mix together the pumpkin puree, sugar, eggs, and vegetable oil until smooth. Gradually stir in the milk.
  4. Pour the wet mixture into the dry ingredients, folding until just combined.
  5. Fold in the white chocolate chips.
  6. Line a muffin tin with paper liners and fill each cavity about two-thirds full with the batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the tin for 5 minutes before transferring to a wire rack.

Notes

For a lighter treat, replace half of the sugar with applesauce. Experiment with nuts for added crunch.
