Ingredients

- 1 lb ground meat (beef, pork, or turkey)
- 1 cup breadcrumbs
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, diced
- 1 cup sour cream
- 2 cups beef broth
- Fresh herbs (parsley and thyme)
- Salt, pepper, and smoked paprika to taste
Instructions
- In a large mixing bowl, combine ground meat, breadcrumbs, onion, garlic, salt, pepper, and smoked paprika. Mix gently.
- Roll the mixture into 1-inch meatballs and brown them in a skillet with olive oil over medium-high heat for 6-8 minutes.
- Remove the meatballs and sauté mushrooms in the same skillet until golden brown (about 5 minutes).
- Sprinkle flour over the mushrooms, stir, and pour in beef broth while stirring. Simmer to thicken.
- Add meatballs back to the skillet and simmer together for 15 minutes.
- Remove from heat and stir in sour cream until creamy.
- Serve hot over egg noodles or rice, garnished with fresh herbs.
Notes
For a vegetarian version, use lentils or chickpeas and substitute cashew cream for sour cream.
