Ingredients

- 1 pound ground meat (beef, turkey, or chicken)
- 1 cup breadcrumbs (or crushed crackers)
- 1 large egg
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped bell pepper
- 1/2 cup grated carrots
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/4 cup ketchup
- 2 tablespoons brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease your muffin tin.
- In a large bowl, combine the ground meat with breadcrumbs, egg, finely chopped vegetables, garlic, salt, pepper, thyme, and oregano. Mix until just combined.
- Spoon the mixture into the greased muffin tin, filling each cup about three-quarters full.
- In a small bowl, mix ketchup with brown sugar for the topping. Spoon it over each cup.
- Bake for 20-25 minutes, or until cooked through and tops are caramelized.
- Let cool for a few minutes before carefully removing from the tin.
Notes
Feel free to play with substitutions like gluten-free breadcrumbs or adding chopped spinach for extra nutrition.
