Delicious and comforting individual servings of meatloaf, perfect for family dinners or gatherings.


Ingredients

  • 1 pound ground meat (beef, turkey, or chicken)
  • 1 cup breadcrumbs (or crushed crackers)
  • 1 large egg
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper
  • 1/2 cup grated carrots
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your muffin tin.
  2. In a large bowl, combine the ground meat with breadcrumbs, egg, finely chopped vegetables, garlic, salt, pepper, thyme, and oregano. Mix until just combined.
  3. Spoon the mixture into the greased muffin tin, filling each cup about three-quarters full.
  4. In a small bowl, mix ketchup with brown sugar for the topping. Spoon it over each cup.
  5. Bake for 20-25 minutes, or until cooked through and tops are caramelized.
  6. Let cool for a few minutes before carefully removing from the tin.

Feel free to play with substitutions like gluten-free breadcrumbs or adding chopped spinach for extra nutrition.
