Ingredients

  • 1 lb boneless chicken (breast or thighs), chopped
  • 2 bell peppers (red, yellow, or green), sliced
  • 3 cloves garlic, minced
  • 1 onion (yellow or red), sliced
  • 8 oz mushrooms (button or cremini), sliced
  • 1 zucchini, sliced
  • 2 cups spinach or kale
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare your ingredients: Chop chicken, slice bell peppers and onion, and clean and slice mushrooms.
  2. Heat a generous amount of olive oil in a large skillet or wok over medium-high heat.
  3. Add the chicken to the hot oil, season with salt and pepper, and cook until golden, about 5–7 minutes.
  4. Toss in the garlic and onion, cooking until the onions turn translucent.
  5. Add the bell peppers, zucchini, and mushrooms; stir-fry for about 4–5 minutes until vegetables are tender-crisp.
  6. Fold in spinach or kale and dried herbs, allowing greens to wilt.
  7. Taste and adjust seasoning with salt, pepper, or lemon juice if desired.
  8. Transfer to a serving dish and drizzle with extra olive oil before serving.

Notes

Serve hot over rice or quinoa, or in warm pita pockets. Leftovers keep well in an airtight container for up to 3 days.
