Ingredients

- 2 boneless chicken breasts or thighs
- 3 tablespoons olive oil
- 3 cloves fresh garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon dried oregano
- Salt and pepper, to taste
- Crisp lettuce, chopped
- 2 medium tomatoes, diced
- 1 cucumber, diced
- 1 cup tzatziki sauce
- 1/2 cup crumbled feta cheese
- Toasted pita bread, for serving
Instructions
- Marinate the chicken by whisking together olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Coat the chicken and let it marinate for at least 30 minutes.
- Prepare the tzatziki sauce by mixing yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and fresh dill or mint in a bowl. Season with salt and pepper.
- Preheat the grill or skillet over medium-high heat. Grill the chicken for 6-7 minutes per side until cooked through (165°F internal temperature).
- Remove the chicken and let it rest for a few minutes, then slice it into strips or cubes.
- Assemble the bowls with a base of lettuce, topped with diced tomatoes, cucumbers, chicken, and tzatziki. Drizzle with more tzatziki and sprinkle with feta cheese.
- Serve with toasted pita on the side.
Notes
You can substitute yogurt for tzatziki and use firm tofu or chickpeas for a vegetarian option.
