Description

A delightful blend of grilled chicken, fresh veggies, and creamy tzatziki for a flavorful Mediterranean experience.


Ingredients

  • 2 boneless chicken breasts or thighs
  • 3 tablespoons olive oil
  • 3 cloves fresh garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • Crisp lettuce, chopped
  • 2 medium tomatoes, diced
  • 1 cucumber, diced
  • 1 cup tzatziki sauce
  • 1/2 cup crumbled feta cheese
  • Toasted pita bread, for serving

Instructions

  1. Marinate the chicken by whisking together olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Coat the chicken and let it marinate for at least 30 minutes.
  2. Prepare the tzatziki sauce by mixing yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and fresh dill or mint in a bowl. Season with salt and pepper.
  3. Preheat the grill or skillet over medium-high heat. Grill the chicken for 6-7 minutes per side until cooked through (165°F internal temperature).
  4. Remove the chicken and let it rest for a few minutes, then slice it into strips or cubes.
  5. Assemble the bowls with a base of lettuce, topped with diced tomatoes, cucumbers, chicken, and tzatziki. Drizzle with more tzatziki and sprinkle with feta cheese.
  6. Serve with toasted pita on the side.

Notes

You can substitute yogurt for tzatziki and use firm tofu or chickpeas for a vegetarian option.
