Ingredients
- Good-quality sourdough or ciabatta bread
- Fresh mozzarella cheese
- Feta cheese
- Freshly sliced cremini or button mushrooms
- Sun-dried tomatoes (oil-packed)
- Olive oil or butter
- Fresh basil or oregano
Instructions
- Sauté sliced mushrooms in olive oil over medium heat until browned, about 5-7 minutes. Season with salt and pepper and set aside.
- Layer a slice of bread with mozzarella, sautéed mushrooms, sun-dried tomatoes, feta, and fresh herbs. Cap it with another slice of bread.
- In a skillet over medium-low heat, add olive oil or butter and place the sandwich in the skillet. Cook until golden brown, about 3-4 minutes.
- Flip the sandwich gently and cook the other side until toasty and cheese is melted, about another 3-4 minutes.
- Slice the sandwich in half and serve warm, possibly with tomato soup or a salad.
Notes
For variations, consider adding roasted red peppers or spinach. Ensure not to overload the sandwich to maintain crispiness.
