A festive blueberry cake with a tender crumb, topped with creamy frosting, perfect for holiday gatherings.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ cup unsalted butter, softened
- 3 large eggs
- 2 tsp vanilla extract
- 1 cup milk
- 2 cups fresh blueberries
- 1 cup cream cheese, softened
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, beat the butter with the sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then mix in the vanilla.
- Gradually add the dry ingredients to the wet ingredients, alternating with milk, starting and ending with the dry mixture.
- Gently fold in the blueberries.
- Pour the batter into the prepared pan and spread evenly.
- Bake in the preheated oven for 30-35 minutes or until a toothpick comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the cream cheese frosting by mixing softened cream cheese with powdered sugar and vanilla until smooth, then frost the cooled cake.
- Cut into squares and serve.
Notes
For a lighter option, consider using Greek yogurt instead of cream cheese for frosting. This cake freezes well if wrapped properly.
