Tender meatballs simmered in a savory broth with caramelized onions and melted mozzarella, perfect for family gatherings.


Ingredients

  • 1 lb Ground Beef or Ground Turkey
  • 2 Yellow Onions, sliced
  • 3 cloves Garlic, minced
  • 1 cup Bread Crumbs (Panko preferred)
  • 1 Egg
  • 1/2 cup Parmesan Cheese, grated
  • 1 tbsp Fresh Thyme, chopped
  • 1 tbsp Fresh Parsley, chopped
  • 1 cup Beef Broth
  • 1 cup Mozzarella Cheese, shredded
  • Salt and Pepper to taste

Instructions

  1. In a large bowl, combine ground meat, bread crumbs, minced garlic, egg, grated Parmesan, chopped herbs, salt, and pepper. Mix until just combined.
  2. Form the mixture into meatballs, about 1-inch in diameter.
  3. In a skillet over medium heat, sauté sliced onions in olive oil until soft and caramelized, about 15-20 minutes.
  4. Pour the caramelized onions into the crock pot. Place the meatballs on top and pour in the beef broth.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, sprinkle mozzarella on top and let it melt.
  7. Serve with fresh parsley for garnish.

Notes

For extra flavor, brown the meatballs in a skillet before adding to the crock pot. Serve over creamy mashed potatoes or egg noodles.
