- 1 lb Ground Beef or Ground Turkey
- 2 Yellow Onions, sliced
- 3 cloves Garlic, minced
- 1 cup Bread Crumbs (Panko preferred)
- 1 Egg
- 1/2 cup Parmesan Cheese, grated
- 1 tbsp Fresh Thyme, chopped
- 1 tbsp Fresh Parsley, chopped
- 1 cup Beef Broth
- 1 cup Mozzarella Cheese, shredded
- Salt and Pepper to taste
Instructions
- In a large bowl, combine ground meat, bread crumbs, minced garlic, egg, grated Parmesan, chopped herbs, salt, and pepper. Mix until just combined.
- Form the mixture into meatballs, about 1-inch in diameter.
- In a skillet over medium heat, sauté sliced onions in olive oil until soft and caramelized, about 15-20 minutes.
- Pour the caramelized onions into the crock pot. Place the meatballs on top and pour in the beef broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, sprinkle mozzarella on top and let it melt.
- Serve with fresh parsley for garnish.
Notes
For extra flavor, brown the meatballs in a skillet before adding to the crock pot. Serve over creamy mashed potatoes or egg noodles.
