- 1 lb ground beef (80/20)
- 2 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 1 cup fresh breadcrumbs
- 1 large egg
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 1 tbsp butter (for caramelizing onions)
Instructions
- Caramelize the onions in a skillet with butter over medium heat for 20-30 minutes until golden.
- In a large bowl, combine ground beef, breadcrumbs, caramelized onions, minced garlic, Worcestershire sauce, egg, and herbs. Mix until just combined.
- Shape the mixture into a loaf on a parchment-lined baking sheet or in a loaf pan.
- Preheat oven to 350°F (175°C) and bake for 1 hour until the internal temperature reaches 160°F (70°C).
- Let the meatloaf rest for 10-15 minutes before slicing for serving.
- Garnish with fresh parsley or chives if desired.
Notes
For variations, ground turkey or chicken can be used, and breadcrumbs can be substituted with crushed crackers or oats.
