  • 2 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup fresh breadcrumbs
  • 1 large egg
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 1 tbsp butter (for caramelizing onions)

Instructions

  1. Caramelize the onions in a skillet with butter over medium heat for 20-30 minutes until golden.
  2. In a large bowl, combine ground beef, breadcrumbs, caramelized onions, minced garlic, Worcestershire sauce, egg, and herbs. Mix until just combined.
  3. Shape the mixture into a loaf on a parchment-lined baking sheet or in a loaf pan.
  4. Preheat oven to 350°F (175°C) and bake for 1 hour until the internal temperature reaches 160°F (70°C).
  5. Let the meatloaf rest for 10-15 minutes before slicing for serving.
  6. Garnish with fresh parsley or chives if desired.

Notes

For variations, ground turkey or chicken can be used, and breadcrumbs can be substituted with crushed crackers or oats.
