Ingredients

  • 1 cup adobo sauce (homemade or store-bought)
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin

  • 2 tablespoons vinegar (white or apple cider)
  • 1 cup tomatoes (fresh or canned, diced)
  • Fresh cilantro, for garnish

Instructions

  1. Pat the chicken dry and season generously with salt, cumin, and paprika.
  2. In a large skillet over medium heat, add olive oil and sauté chopped onions until translucent, then add minced garlic until fragrant.
  3. Increase the heat to medium-high and add the seasoned chicken. Sear for about 4-5 minutes on each side until golden.
  4. Pour in the adobo sauce over brown chicken and toss to coat. Reduce the heat to low and let it simmer.
  5. Add diced tomatoes or black beans if desired for extra flavor and nutrition.
  6. Simmer until the chicken is fully cooked and tender, about 20-25 minutes.
  7. Garnish with freshly chopped cilantro and serve with warm tortillas, rice, or a fresh salad.
