- 1 cup adobo sauce (homemade or store-bought)
- 4 cloves garlic, minced
- 1 onion, chopped
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon oregano
- 2 tablespoons vinegar (white or apple cider)
- 1 cup tomatoes (fresh or canned, diced)
- Fresh cilantro, for garnish
Instructions
- Pat the chicken dry and season generously with salt, cumin, and paprika.
- In a large skillet over medium heat, add olive oil and sauté chopped onions until translucent, then add minced garlic until fragrant.
- Increase the heat to medium-high and add the seasoned chicken. Sear for about 4-5 minutes on each side until golden.
- Pour in the adobo sauce over brown chicken and toss to coat. Reduce the heat to low and let it simmer.
- Add diced tomatoes or black beans if desired for extra flavor and nutrition.
- Simmer until the chicken is fully cooked and tender, about 20-25 minutes.
- Garnish with freshly chopped cilantro and serve with warm tortillas, rice, or a fresh salad.
