- 1 lb boneless chicken breast or thighs, diced
- 6 corn or flour tortillas
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup bell peppers, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tbsp olive oil
- Fresh cilantro, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Sauté diced onions until translucent, then add minced garlic and cook for an additional minute.
- Add the diced chicken to the skillet, seasoning with cumin, chili powder, and smoked paprika. Cook until the chicken is no longer pink.
- Stir in the canned tomatoes and black beans. Let simmer for a few minutes.
- In a baking dish, layer the tortillas, followed by the chicken mixture, and then sprinkle a generous amount of cheese on top. Repeat layers and finish with cheese.
- Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes or until cheese is bubbly and golden.
- Allow to cool for a few minutes before garnishing with chopped cilantro. Serve warm.
Notes
For a quicker preparation, use shredded rotisserie chicken. For a vegetarian version, substitute chicken with sautéed zucchini or more beans.
