Ingredients

  • 1 lb boneless chicken breast or thighs, diced
  • 6 corn or flour tortillas
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup bell peppers, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onions until translucent, then add minced garlic and cook for an additional minute.
  3. Add the diced chicken to the skillet, seasoning with cumin, chili powder, and smoked paprika. Cook until the chicken is no longer pink.
  4. Stir in the canned tomatoes and black beans. Let simmer for a few minutes.
  5. In a baking dish, layer the tortillas, followed by the chicken mixture, and then sprinkle a generous amount of cheese on top. Repeat layers and finish with cheese.
  6. Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes or until cheese is bubbly and golden.
  7. Allow to cool for a few minutes before garnishing with chopped cilantro. Serve warm.

Notes

For a quicker preparation, use shredded rotisserie chicken. For a vegetarian version, substitute chicken with sautéed zucchini or more beans.
