- 1 store-bought rotisserie chicken
- 8 tostada shells
- 2 ripe avocados, sliced
- 1 cup salsa (pico de gallo or store-bought)
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
Instructions
- Remove skin and bones from the rotisserie chicken, shredding the meat into bite-sized pieces. Set aside.
- Toast the tostada shells in the oven at 400°F for about 5 minutes.
- Chop fresh tomatoes for salsa and slice the avocados. Optionally, add sliced jalapeños for heat.
- On each tostada, layer the shredded chicken, top with salsa, and add avocado slices. Sprinkle with cilantro and squeeze lime juice over top.
- Serve immediately and let everyone customize their own tostadas.
Notes
For extra flavor, consider marinating the chicken in lime juice and spices before shredding. Serve with black beans or a fresh salad.
