- 1.5 lbs boneless chicken (breast or thighs)
- 2 cans white beans (cannellini or great northern)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1 pinch cinnamon
- 1 can diced tomatoes (about 14.5 oz)
- 4 cups chicken broth
- Fresh parsley or cilantro, chopped
- 1 tbsp olive oil
- Juice of 1 lemon
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5-7 minutes until translucent.
- Stir in minced garlic and cook for an additional minute.
- Add cumin, coriander, paprika, and cinnamon; toast spices for 1-2 minutes.
- Incorporate the chicken pieces and cook for about 5-6 minutes until browned.
- Pour in diced tomatoes and chicken broth; bring to a gentle simmer.
- Add drained white beans and simmer for 30-40 minutes until chicken is cooked through.
- Stir in lemon juice and fresh herbs before serving.
- Serve warm, garnished with extra herbs.
