Ingredients

  • 2 cans white beans (cannellini or great northern)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 pinch cinnamon
  • 1 can diced tomatoes (about 14.5 oz)
  • 4 cups chicken broth
  • Fresh parsley or cilantro, chopped
  • 1 tbsp olive oil
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5-7 minutes until translucent.
  2. Stir in minced garlic and cook for an additional minute.
  3. Add cumin, coriander, paprika, and cinnamon; toast spices for 1-2 minutes.
  4. Incorporate the chicken pieces and cook for about 5-6 minutes until browned.
  5. Pour in diced tomatoes and chicken broth; bring to a gentle simmer.
  6. Add drained white beans and simmer for 30-40 minutes until chicken is cooked through.
  7. Stir in lemon juice and fresh herbs before serving.
  8. Serve warm, garnished with extra herbs.
