Description

Delicious Mini Beef Wellington Bites filled with tender beef and savory mushroom duxelles, wrapped in flaky puff pastry.


Ingredients

  • 1 lb tender beef (filet mignon or beef tenderloin)
  • 8 oz cremini or shiitake mushrooms, finely chopped
  • 2 cloves fresh garlic, minced
  • 1 onion, diced (sweet or yellow)
  • 1 sheet puff pastry
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons Dijon mustard
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Prepare the Mushroom Duxelles: Sauté chopped mushrooms, garlic, and onions in a skillet over medium heat for about 10 minutes until moisture is released. Stir in herbs, salt, and pepper. Allow to cool.
  2. Sear the Beef: Season beef with salt and pepper, sear in the skillet until browned on all sides (rare to medium-rare). Cool and spread mustard on top.
  3. Assemble the Bites: Roll out puff pastry, cut into squares. Place mushroom duxelles on pastry, top with beef, fold over, and seal. Brush with egg wash.
  4. Bake: Preheat oven to 400°F (200°C). Bake assembled bites on parchment-lined sheet for 20-25 minutes until golden. Cool slightly before serving.

For best results, use cold ingredients and handle the pastry minimally to maintain its flakiness.
