  • 2 tablespoons cornstarch
  • 1 teaspoon almond extract
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 pie crust (homemade or store-bought)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the cherries: Pit and chop the fresh cherries. If using frozen, thaw them and drain excess liquid.
  3. Make the filling: In a bowl, mix cherries with sugar, cornstarch, lemon juice, almond extract, and salt. Let it sit while you prepare the crust.
  4. Roll out the pie crust: Roll your dough to about 1/8 inch thick and cut into circles for mini pie tins.
  5. Fill the crust: Gently place filling into the crust, avoiding overfilling.
  6. Top with crust: Cut smaller circles for the top or use traditional lattice.
  7. Bake: Place them in the oven for 20-25 minutes until the crusts are golden and the filling is bubbly.
  8. Cool and enjoy: Allow the pies to cool slightly before indulging.

Notes

For a golden crust, brush with an egg wash before baking. Let pies cool before slicing to maintain shape.
