- 2 cups fresh cherries, pitted and chopped
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon almond extract
- 1 tablespoon lemon juice

- 1 pie crust (homemade or store-bought)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the cherries: Pit and chop the fresh cherries. If using frozen, thaw them and drain excess liquid.
- Make the filling: In a bowl, mix cherries with sugar, cornstarch, lemon juice, almond extract, and salt. Let it sit while you prepare the crust.
- Roll out the pie crust: Roll your dough to about 1/8 inch thick and cut into circles for mini pie tins.
- Fill the crust: Gently place filling into the crust, avoiding overfilling.
- Top with crust: Cut smaller circles for the top or use traditional lattice.
- Bake: Place them in the oven for 20-25 minutes until the crusts are golden and the filling is bubbly.
- Cool and enjoy: Allow the pies to cool slightly before indulging.
Notes
For a golden crust, brush with an egg wash before baking. Let pies cool before slicing to maintain shape.
