- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 cup heavy cream
- 2 tbsp instant coffee or espresso powder
- 1/2 cup unsweetened cocoa powder
- 1 tsp vanilla extract
- 1/2 cup unsalted butter, melted
- 1 1/2 cups graham cracker crumbs
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan and pre-bake for 10 minutes.
- In a mixing bowl, beat softened cream cheese and granulated sugar until smooth. Add sour cream and heavy cream and mix until silky. Stir in instant coffee or espresso powder and cocoa powder.
- Pour the cheesecake mixture over the pre-baked crust, smoothing out the top.
- Bake for 50-60 minutes, or until the edges are set and the center jiggles slightly.
- Allow to cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, top with whipped cream or dust with cocoa powder.
Notes
For best results, let the cheesecake chill overnight to enhance flavors. Avoid overmixing to prevent cracks.
