- 1 ½ cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 1 cup bittersweet chocolate, chopped
- 1 cup strong brewed coffee
- ¾ cup granulated sugar
- 3 large eggs, at room temperature
- 1 cup heavy cream
- 1 cup whipping cream
- Chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C). Combine graham cracker crumbs with melted butter and a pinch of sugar. Press into a pie dish and bake for 10 minutes. Allow to cool completely.
- In a saucepan, melt bittersweet chocolate over low heat. Stir in brewed coffee. In a separate bowl, whisk together sugar, eggs, and salt, then add the chocolate mixture.
- Pour the filling into the prepared crust and bake for 20-25 minutes, until set but jiggly in the center. Cool at room temperature and refrigerate for at least 4 hours.
- Whip heavy cream until soft peaks form and spread over the chilled pie. Garnish with chocolate shavings.
- Slice and serve with loved ones.
Notes
For a vegan version, use crushed cookies for the crust, coconut cream instead of heavy cream, and plant-based chocolate.
