Instructions
- Preheat the oven to 350°F (175°C).

- Mash the ripe bananas in a mixing bowl until smooth.
- Add the eggs, oil, and vanilla extract; stir until combined.
- In another bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Fold the dry ingredients into the wet ingredients gently.
- Pour the batter into the prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
- Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Optional: Dust with powdered sugar or top with desired toppings before serving.
Notes
For best results, use very ripe bananas and avoid overmixing to keep the cake tender. Serve with a dusting of powdered sugar or a dollop of Greek yogurt.
