Description

A nostalgic and moist banana cake recipe that requires no mixer, bringing warmth and sweetness to any occasion.

Ingredients

Scale
  • 3 overripe bananas
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup yogurt or sour cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Mash the overripe bananas in a large mixing bowl until chunky but smooth.
  3. Stir in the melted butter, then add sugar, eggs, and vanilla; mix until well combined.
  4. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top. Bake for about 60 minutes, or until a toothpick comes out clean.
  7. Cool the cake in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Ensure bananas are very ripe for the best flavor. Monitor baking time closely as ovens may vary.
