A rich and indulgent molten chocolate lava cake perfect for Valentine’s Day or any special occasion.


Ingredients

  • 4 oz quality dark chocolate (bittersweet or semi-sweet)
  • ½ cup unsalted butter
  • ½ cup granulated sugar (or brown sugar)
  • 2 whole eggs
  • 2 egg yolks
  • ¼ cup all-purpose flour (or almond flour for gluten-free)
  • 1 tsp vanilla extract
  • a pinch of salt

Instructions

  1. Preheat the oven to 425°F (220°C). Grease ramekins and dust with cocoa powder.
  2. In a medium bowl, combine chopped chocolate and butter. Melt over a double boiler or microwave, stirring until smooth. Let cool slightly.
  3. In a separate bowl, whisk together eggs, egg yolks, and sugar until pale and thickened.
  4. Slowly incorporate the cooled chocolate mixture into the egg mixture, stirring gently.
  5. Fold in flour and salt until just incorporated.
  6. Evenly divide the batter among the prepared ramekins, filling them about ¾ full.
  7. Bake for 12 to 14 minutes, until edges are firm but the center is still soft.
  8. Cool for a minute, then invert onto plates and serve immediately with ice cream or fresh berries.
